The Wynn Lounges Assistant General Manager oversees all day-to-day operations of three premium lounges including Tower Bar a Forbes Five-Star rated, full-service luxury lounge at Wynn Las Vegas, operating from morning through evening to serve the property’s most valued guests. The outlet runs a multi-day part operation encompassing artisan barista coffee service, a curated craft cocktail program developed by our Master Mixologist, an exclusive reserve wine list, and chef-inspired small bites. All service is executed to Forbes Five-Star standards, requiring meticulous attention to product quality, staff performance, and operational consistency across every shift.
CORE JOB RESPONSIBILITIES
The Tower Bar Assistant General Manager is a key leadership role responsible for the seamless, world-class operation of all Wynn Lounges, but are not limited to:
Operational Leadership
- Oversee and manage all day-to-day operations of the Tower Bar across all day parts, ensuring every touchpoint reflects Forbes Five-Star service standards with no compromise in quality, pace, or presentation.
- Direct the full scope of multi-daypart operations, from morning artisan coffee service through afternoon and evening craft cocktail and dining service, maintaining consistent staffing, product readiness, and floor execution at each transition.
- Manage pre-shift and post-shift routines, including team briefings, side work assignments, floor readiness inspections, and end-of-shift accountability to ensure the outlet opens and closes at the highest standard each day.
- Monitor and manage floor coverage, table pacing, and service flow in real time, making in-the-moment staffing and operational adjustments to maintain an elevated and seamless guest experience.
- Serve as the primary point of accountability on the floor, resolving operational issues, guest concerns, and team challenges with professionalism and urgency.
- Partner cross-functionally with Rooms, Butler, Concierge, and other property departments to coordinate VIP arrivals, special requests, and amenity deliveries that touch the Tower Bar operation.
- Champion a culture of operational excellence and continuous improvement, holding the team accountable to Forbes Five-Star standards while fostering an environment of pride, ownership, and hospitality.
Beverage & Culinary Program
- Support the execution and integrity of the Tower Bar's curated craft cocktail program.
- Manage and maintain the reserve wine list, ensuring proper inventory, service standards, and guest education.
- Collaborate with culinary leadership to uphold the quality and presentation of chef-inspired small bites.
- Demonstrate advanced beverage expertise across coffee service, spirits, cocktails, and wine categories.
Team Development & Standards
- Recruit, schedule, train, and evaluate all beverage staff, fostering a high-performance team aligned with Wynn Las Vegas service standards.
- Conduct regular coaching and performance evaluations to ensure continuous development and accountability.
- Ensure cleanliness and sanitation of all work areas and equipment in strict compliance with Health Department standards.
- Maintain thorough knowledge of and adherence to all company policies, Forbes Five-Star standards, and regulatory requirements.
Business & Administrative Operations
- Utilize POS systems and MS Office tools to manage scheduling, reporting, and operational analytics.
- Monitor inventory levels and collaborate with procurement to ensure availability of premium products.
- Identify opportunities to enhance the guest experience and drive the overall success of the Tower Bar.
- Minimum of 1 year management experience in food and beverage high-volume, fast-paced, luxury environment; prior experience in a Forbes-rated or five-star outlet is strongly preferred.
- Advanced knowledge of beverages and cocktails, including specialty coffee, curated craft cocktails, reserve wine programs, and premium spirits.
- Demonstrated ability to deliver and uphold Forbes Five-Star service standards in a high-touch, guest-facing environment.
- Exceptional communication skills with the ability to read, write, and speak English fluently and professionally.
- Proficiency in computer skills including MS Office Suite and Point of Sale (POS) systems.
- Proven ability to lead, inspire, and self-manage within a fast-paced, team-oriented environment.
- Must be able to obtain and maintain all licensing or active work cards required for this position, now and in the future.
